Vegan Banana Bread




This vegan banana bread is moist, healthy, and SUPER easy to make. No eggs were involved and no animals were harmed making this bread.


You can use different variations for this like chocolate chips and walnuts, or white chocolate and coconut, or even even add some carrot in there.


This is a perfect little snack when you're feeling hungry in the morning or afternoon!


Vegan Banana Bread


Prep time: 5-10minutes

Cook time: 55 minutes

Total time: 60 minutes to 1 hour and 5 minutes


Ingredients:

- 1 and 3/4 cup of flour

- 1/4 cup of coconut sugar or white sugar

- 1/2 tsp of baking soda

- 2 tsp of baking powder

- 1/3 cup of coconut oil or vegan butter

- 4 medium sized bananas (I used frozen ones I had in the fridge and defrosted them overnight)

- 1/4 cup of almond milk or oat milk


Optional but recommended:

- 1 cup of chocolate chips

- 1/3 cup of chopped walnuts


Instructions:

1. Preheat oven to 350F


2. In a large mixing bowl, mash together bananas with a fork. Then add the coconut oil and almond milk/oat milk and mix together.


3. Add the flour, baking soda, baking powder, and sugar to the mixture. Add in chocolate chips and walnuts last. Don't overmix, just mix until everything's combined.


4. It should be pretty thick but if it's too clumpy, add a tiny bit more plant milk to the mix.


5. Put the banana bread dough into a greased pan. Bake for 55 minutes to an hour.


6. Let cool for 10 minutes or so in the pan before taking it out to slice.
