No Mess 15 Minute Salmon

I wanted to make something simple, delicious and quick. This is a very easy weeknight meal and got a lot of reviews on my instagram. Give this a try and let me know in the comments or tag me in your photos on IG so I can see your creations! :)

*Note: I'm not putting specific amounts because this dish is very versatile and it's entirely up to you for how much of the vegetables you want to use

Serves: 1

Prep time: 10 minutes

Cook time: 12-15 minutes

Total time: 22-25 minutes


- 1 salmon filet

- 1 tbsp of butter or vegan butter

- soju (1/2 tbsp )

- soy sauce and lemon juice (or ponzu)

- garlic, minced

- carrot, julienned or sliced

- onion, julienned or sliced

- green onion, chopped

- salt pepper


- preheat oven to 400 degrees

- salt and pepper the salmon

- lay out a piece of tinfoil and put 1/2 tbsp of butter on the foil, lay a bed of the sliced onions on top

- put salmon on top of onions on the onion bed

- lay out the sliced carrots on top of the salmon (like shown in the photo) - sprinkle 1/2 tbsp of soju on the salmon

- put the dollop of the 1/2 of the tbsp of butter on the salmon

- fold the salmon very tightly

- Cook salmon in oven for 12-15 minutes (I like mine 13-14!)
