Pantry Meals During Corona From Your Creators

As the pandemic progresses, we're all hopefully doing our part by social distancing and staying at home.


What does this mean? No happy hour at your favourite bars, no wine nights with you friends, brunching and dining out. A lot of us are busy and aren't used to cooking delicious meals out of pantry staples like canned goods and other vegetables.


I've gathered some of my favourite wellness creators/influencers/ health bloggers to share some of their favorite meals out of their pantry staples.



1. White Bean Tomato Soup with Toasted Fennel Seeds

1) What pantry staples and other ingredients do we need for this recipe? - Olive oil

- Fennel Seeds

- Onion

- Garlic

- Oregano

- Bay leaves

- Canned tomatoes or fresh tomatoes

- Canned white kidney beans


2) Recipe

Ingredients:

  • 2 tsp extra virgin olive oil

  • 1 tsp fennel seeds

  • 1 medium onion, diced

  • 4 medium cloves garlic, minced

  • 1 tsp oregano

  • 2 bay leaves

  • 28 oz can whole peeled tomatoes (can sub diced or crushed tomatoes)

  • 3 cups cannellini (white kidney) beans, or 2 14 oz cans, no added preservatives

  • Salt and pepper


Preparation:

  1. Heat a stock pot over medium heat. Add the oil and fennel seeds and toast until seeds darken and smell fragrant.

  2. Add the onion and a pinch of salt, and sauté until translucent, about five minutes.

  3. Add the garlic, oregano, and bay leaves and sauté for another minute.

  4. Pour in the entire can of tomatoes including juices, squishing the tomatoes in your hands to break them up. Add the cannellini beans, including the water they cooked in or the water in the can.*

  5. Season with salt and pepper to taste and simmer, partially covered, for ten minutes. Add water or stock if needed to thin the soup out to your desired consistency.


*if your canned white beans contain a preservatives, such as disodium edta, drain and rinse the beans, then use plain water instead.


3) What is your most important pantry item you made sure you had stocked up during this pandemic?

"My must have pantry staples now and always are dried or canned beans! They are inexpensive, nutritious (they count as both a protein source and a vegetable), versatile, and delicious. I eat beans, chickpeas, and/or lentils every single day."




2. Spinach Lentil Curry (Daal)

1) What pantry staples and other ingredients do we need for this recipe?

- avocado oil or any other kind of oil

- garlic

- onion

- ginger

- curry and turmeric powder

- cumin seeds

- yellow lentil

- tomatoes

- veggie broth

sweet potato


2) Recipe

Ingredients

  • 1 tbsp avocado oil

  • 3 garlic, minced

  • 1 onion, diced

  • 1 tsp of ginger

  • 1 tbsp of curry powder

  • 1 tsp of turmeric powder

  • 1 tsp of cumin seeds

  • 2 cups or pre-soaked yellow lentils

  • 1 16ou of fire-roasted diced tomatoes

  • 4 cups of veggie broth

  • 1 large sweet potato

  • salt and pepper to taste

  • For serving ( add cilantro, yogurt or serve over brown rice)

Instructions

  1. Rinse pre-soaked lentils well*

  2. Turn Instant Pot to sauté function, add 1 tsp of cumin seeds and oil and let it sizzle for a minute, until fragrant. Then add diced onion and cook for 3-4 minutes until translucent. Followed by minced garlic and ginger to cook for another minute. ( I like to see a little brown bits)

  3. Then switch to pressure cook for 6 minutes. Deglaze the pot by adding hot broth first then add the rest of ingredients, making sure to add tomatoes last and not to stir. Pressure cook for 6 minutes and release naturally.

  4. After time is up stir in spinach or kale if you like, cover the lid to make sure it wilts. Check seasoning to taste. Enjoy!

3) What is your most important pantry item you made sure you had stocked up during this pandemic?

"One of the most important pantry staples I can't live without is canned fire roasted tomatoes. I use it all the time for my curries and making soup."




3. Instant Pot Italian Wedding Soup

1) What pantry staples and other ingredients do we need for this recipe?

- beef and ground pork

- egg

- bread for breadcrumbs

- garlic

- parmesan cheese

- carrots

- onions

- celery

- chicken broth or any other broth will do!

- herbs like oregano, parsley, basil, rosemary

- couscous

- spinach


2) Recipe

Ingredients: ⁣ Meatballs - 1/2 lb Grass Fed Ground Beef - 1/2 lb ground pork - 1 egg beaten - 1/2 cup Italian breadcrumbs - 1/4 cup Parmesan Cheese finely grated - 3 cloves garlic finely diced - 1/3 cup fresh Parsley roughly chopped - Salt & Freshly Ground Pepper Soup - 2 carrots, peeled, quartered and diced - 2 large yellow onions, diced - 2 celery stalks, diced - 8 cups Chicken stock - 1 tsp oregano - 1 tsp parsley - 1 tsp basil - 1/2 tsp rosemary - 3 cloves garlic, minced - Salt/Pepper - ¾ cup dry Pearl Couscous - 4 cups fresh Spinach


Instructions:⁣⁣ Gently combine the meatball ingredients, roll into 1-inch balls.Brown the meatballs in batches on saute mode in your instant pot. Remove from pot.Add the onions, carrots, and celery. Saute for 6 minutes, until softened. Add the garlic, saute for 1 minute. Add the chicken stock, herbs, and meatballs. Put the lid on and program to soup, set for 6 minutes.Add the acini de pepe or couscous, simmer on saute mode for 9 minutes.Stir in the spinach, garnish with fresh Parmesan cheese and parsley. Enjoy!

3) What is your most important pantry item you made sure you had stocked up during this pandemic?

"Pearl Couscous -- I always keep a big jar full! - and Stock (powdered or concentrated can be substituted here as its often on hand and has a long shelf life.)"



4. Oatmeal Breakfast Cups

1) What pantry staples and other ingredients do we need for this recipe?

- oatmeal

- sugar

- nuts, chocolate chips, or any other toppings

2) Recipe

Ingredients: ⁣

- 3 cups of oatmeal

- 1/4 cup of brown sugar

- 3 cups of water

- 1 pinch of sea salt

- Assorted fruit, nuts, chocolate chips, or other toppings


Instructions:⁣⁣

- Combine oats, water, sugar, and salt in saucepan and bring to boil

- Reduce heat to medium, cook for 2-3 minutes or desired consistency

- Set aside to cool

- Grease muffin pan

- Divide evenly into 12 muffin cups, place desired toppings

- Cover with plastic wrap and place in freezer until frozen

- Once frozen, pop out of muffin tins. Remove the number of muffins the night before and warm in microwave for 1-2 minutes, add milk if desired.

"My most important staple is a high quality protein powder. I love smoothies or making Energy balls..."
